Grilling some pork tenderloin!
Pork tenderloin is one of those quick and easy, oh so yummy, dinners I make that everyone in my family seems to love. Today's quick marinade served with sweet cole slaw was not different! Another chance to share a Barb original.
Grilled Maple Mustard Pork
1 package of pork tenderloins (the kind that have 2 in a pack. I love to get the family version that has 2 loins in each cryo-vac...one for now and one for the freezer!)
1 TBS dry mustard
1/4 cup real maple syrup
1 TBS garlic powder
1 TBS onion powder
1 TBS paprika
1/4 cup olive oil.
Trim the tenderloin like in this video (https://www.youtube.com/watch?v=LFVYcfyd_S8). Put both tenderloins in ziploc bag and add the remaining ingredients. Seal tightly and massage seasonings and oil into the tenderloin. Refrigerate for 1-12 hours.
I love to grill my tenderloin. Heat the grill on high, as high as it will go. Take loins and place on the back of the grill lowering the heat to med high. Sear on both sides, approximately 3 -4 mins on each side. After searing, turn all flames off, except one (I have 3 flames on my grill and I keep one on). Keep the one you have on on medium high and keep tenderloin on different side of closed grill.
The tenderloin roasts in 20-30 mins. Remove from grill and check internal temperature. See below for internal temp recommendations. I let my tenderloin rest for approximately 10 mins prior to cutting in 1/2 inch thick slices. I serve with sweet cole slaw.
Sweet Cole Slaw
1 package of cole slaw mix without the dressing (we are making some!)
1 cup of mayonnaise
1 lemon's worth of juice
1-2 TBS of maple syrup
Salt and pepper to taste
Mix mayo, lemon juice, syrup and salt and pepper. Pour over cole slaw mix and mix thoroughly. If you like cole slaw more mayo-ny, add more! Slaw tastes best if it can rest for at least an hour in the fridge before serving.
Add some baked beans or a tomato salad and you are set!!
